The work “kelp” refers to any of the brown seaweeds including alaria, wakame, and kombu.
Ingredients:
- 1 cucumber
- ¼ pound kelp
- 4 tablespoons brown rice vinegar
- 1 tablespoon maple syrup
- 3 tablespoons low sodium organic tamari
- 2 tablespoons sesame seeds
Directions:
- Put kelp in a bowl and cover with water
- Let sit for 15 minutes
- Slice into bit-size pieces
- Peel cucumber and slice into thin rounds
- Whisk together vinegar, maple syrup and tamari in a bowl
- Add cucumber and kelp and mix well
- Garnish with sesame seeds or “Eden Shake” and serve
