Kelp and Cucumber Salad

Kelp and Cucumber salad

The work “kelp” refers to any of the brown seaweeds including alaria, wakame, and kombu.

Ingredients:

  • 1 cucumber
  • ¼ pound kelp
  • 4 tablespoons brown rice vinegar
  • 1 tablespoon maple syrup
  • 3 tablespoons low sodium organic tamari
  • 2 tablespoons  sesame seeds

Directions:

  • Put kelp in a bowl and cover with water
  • Let sit for 15 minutes
  • Slice into bit-size pieces
  • Peel cucumber and slice into thin rounds
  • Whisk together vinegar, maple syrup and tamari in a bowl
  • Add cucumber and kelp and mix well
  • Garnish with sesame seeds or “Eden Shake” and serve
